This guide covers everything you need to know to make the most of a short trip to one of Turkey’s most unique destinations.

My husband and I spent three days exploring Cappadocia and the surrounding region — and even eloped at sunrise with hot air balloons filling the sky. It was an unforgettable experience, and I’m sharing exactly how we planned it.

In this post, you’ll find a complete day-by-day breakdown, travel tips, where to stay, and what to expect from the must-see sites.

    Day 1 of Cappadocia Itinerary

    Day 1 of your Cappadocia itinerary will mostly be a travel day, but you’ll still have time to explore in the afternoon.

    Once you arrive and check into your hotel, you can head into town, visit a few shops, and enjoy a great dinner to kick off your trip.

    Travel to + Arrive in Cappadocia 

    We flew into Nevşehir Airport, which is one of the two main airports serving the Cappadocia region.

    From there, we had a pre-booked airport transfer with Welcome Pickups, which made the process so easy. I honestly can’t recommend them enough — we used them throughout our time in Turkey and always had a great experience.

    The drive to Göreme will take about 45 minutes, but if you’re flying into Kayseri instead, it can take closer to an hour.

    Pro Tip: Try to book the earliest flight into Cappadocia so you have time to explore in the afternoon. Make every second count in this amazing destination.

    Check in to Hotel

    Once you arrive in Göreme, check into your cave hotel.

    These unique stays are carved right into the rock and are one of the most iconic parts of the region. Staying in a cave hotel is truly a must-do when visiting Cappadocia.

    We chose Terra Cave Hotel, one of the best affordable cave hotels in the area, and it completely exceeded our expectations. Since we were there to get married, they even surprised us with a free upgrade to a cave suite, which made our stay even more special.

    Take some time to settle in, relax, and enjoy the rooftop terrace views — they’re especially stunning at sunset.

    Explore Town

    Once you’ve settled in, spend the rest of your afternoon wandering through downtown Göreme.

    The streets are lined with charming shops selling everything from handmade pottery to colorful textiles.

    Be sure to stop by Sultan Carpets and Galerie İkman — two of the most well-known rug shops in the area, both perfect for browsing or snapping colorful photos. Just be forewarned that the shop owner is very persuasive in trying to get you to buy something.

    If you have time, grab a Turkish coffee at one of the local cafés and soak in the laid-back vibe before dinner.

    Pro Tip: Rug shops like Galerie İkman have become incredibly popular for Instagram photos, and many now charge a $25 USD photo fee if you want to take pictures inside. Just something to be aware of before you start snapping away.

    Dinner at Topdeck Cave Restaurant

    For dinner, head to Topdeck Cave Restaurant, one of the most unique and intimate dining spots in Göreme.

    It was just a few blocks from our cave hotel, which made it super convenient for us. We messaged them on WhatsApp the day before we arrived and reserved one of the traditional floor seating spots.

    It had a super cozy cave setting, and the staff was great at helping us decide what to order. It was the most delicious traditional Turkish food we had on the trip.

    Day 2 of Cappadocia Itinerary

    Day 2 is a full day of sightseeing around Cappadocia. You’ll kick it off with a soaring flight over the landscape, then cover several of the area’s main attractions, including scenic viewpoints, historical sites, and a guided tour to help you make the most of your time.

    Sunrise Hot air balloon ride or Photo Shoot

    Today, you’ll wake up really early for an epic hot air balloon ride. The experience most people flock to Cappadocia for.

    Watching the sunrise as hundreds of balloons lift off into the sky is something you’ll never forget. This region is famous for it. It’s one of the only places in the world where this kind of experience happens almost daily.

    If the idea of floating through the sky in a basket isn’t for you, consider booking a sunrise photo shoot instead. You can rent a beautiful dress in town and get some stunning photos with the balloons in the background.

    My husband and I actually eloped at sunrise with the balloons all around us, and it was absolutely magical.

    We had our balloon ride booked for our second morning, but it was canceled due to wind. Luckily, the weather was perfect for our elopement — and that’s what mattered most.

    Pro Tip: A hot air balloon ride isn’t guaranteed. They’re often canceled due to weather conditions, especially wind. Book your balloon or photo shoot for your first morning so you have time to reschedule if needed. Most tour companies will move your reservation to the next available day.

    Private Full Day Guided Tour

    After your early morning start, the best way to spend the rest of the day is by booking a private full-day guided tour.

    It’s honestly not that expensive, and in my opinion, totally worth it for the convenience and how much you get to see. Having a knowledgeable tour guide all to yourself makes all the difference — they handle the logistics while you just enjoy the experience.

    Underground City

    The first stop on our tour was the Kaymakli Underground City, one of the largest and most impressive underground settlements in Cappadocia.

    This place is a fascinating maze of tunnels, rooms, and chambers carved deep into the earth. It was one of the coolest things we explored during our trip.

    Pro Tip: I’d definitely suggest taking a light jacket as it gets chilly underground, even in warmer months.

    Pigeon Valley

    Next, we visited Pigeon Valley, which offers amazing views of the surrounding landscape.

    The cliffs are carved with ancient pigeon houses, which locals once used to collect droppings for fertilizing their vineyards. You’ll also see trees covered in blue evil eye charms and locals selling handmade souvenirs.

    From the viewpoint, you can also see Uchisar Castle, the highest point in Cappadocia.

    Pottery Village

    Our next stop was Avanos, a charming town famous for its pottery-making tradition that dates back thousands of years.

    We explored some beautiful showrooms filled with colorful, hand-painted ceramics — honestly, some of the most stunning pottery I’ve ever seen.

    If you don’t mind getting a little dirty, you can even try your hand at traditional pottery making (I gave it a try, and it was harder than it looks!).

    Monks Valley

    Later in the day, we visited Monks Valley, also known as Pasabag, which is famous for its unique mushroom-shaped fairy chimneys. The area features ancient cave dwellings and small chapels carved right into the rock that you can climb up into.

    The rock formations here are truly surreal and were one of the most photogenic spots on our tour.

    Göreme Open Air Museum

    Our tour was supposed to end at the Göreme Open Air Museum, but unfortunately, I had come down with a stomach bug the night before and was feeling pretty wiped out by the end of the tour. I hated to cut the tour short because our guide was fantastic, and I was really looking forward to seeing more — but I needed to rest. I pushed through as much of the day as I could and made the most of it, even if I didn’t get to see everything.


    Dinner @ TUMA Restaurant

    End your day with a delicious dinner at TUMA Restaurant, which offers incredible views of Göreme lit up at night. The food was excellent, and the rooftop setting made it a perfect place to unwind after a full day of exploring.

    Pro Tip: Be sure to make a reservation in advance, especially if you want a table with a view — this spot is quite popular for a reason. WhatsApp: +90 546 182 50 50


    Day 3 of Cappadocia Itinerary

    Today, you’ll be leaving Cappadocia — but hopefully, your adventure doesn’t end here.

    Pro Tip: If you’re heading to another destination in Turkey, I recommend booking your flight for the afternoon. That way, if your hot air balloon ride was canceled earlier due to weather, you’ll still have time to rebook it this morning. It’s one experience you won’t want to miss before moving on.

    Watch Balloons From Balcony

    If you got to do your hot air balloon ride yesterday, I still recommend getting up early this morning to watch the sky fill with balloons one more time. It’s such an incredible sight and totally worth seeing one more time before you leave. Soak up every last bit of the magic before you head out.

    Before you head to the airport, make time for one last Turkish breakfast feast. I honestly think we had the best breakfasts of our trip in Cappadocia. And the Terra Cave Hotel served up an especially great spread. Fresh bread, olives, cheeses, jams, eggs, and more… it was delicious and all included.

    Pro Tip: For a stress-free transfer back to the airport, I recommend booking with Welcome Pickups! I highly recommend it!

    Fly to Next Destination

    After breakfast, you’ll head to the airport for your flight to your next stop in Turkey. If you’re following our 10-day Turkey itinerary, your next destination should be Antalya — a beautiful coastal city that’s perfect for the next leg of your adventure.

    How to Get to Cappadocia

    The easiest way to get to Cappadocia is by flying into one of the two nearby airports: Nevşehir Kapadokya Airport (NAV) or Kayseri Erkilet Airport (ASR).

    Nevşehir is about 45 minutes from Göreme, while Kayseri is a little farther — around an hour away. We flew into Nevşehir Airport, which is newer, said to be better organized, and offers more flight options. Everything went smoothly for us.

    From the airport, we booked a private transfer with Welcome Pickups to take us straight to our hotel. We used them throughout our trip — in Istanbul, Cappadocia, Antalya, and Kas — and every transfer went great.

    We were really impressed with their service and highly recommend them. It’s super convenient and absolutely worth it, in my opinion.

    Where to Stay in Cappadocia

    One of the main attractions in Cappadocia, beyond the landscapes and balloon rides, is staying in one of its famous cave hotels. It’s a unique experience that is a must when staying in Cappadocia.

    Terra Cave Hotel

    We stayed at the Terra Cave Hotel, and highly recommend it. It’s located right in the heart of Göreme, within walking distance to shops, cafes, and some of the best restaurants in town.

    The hotel has a beautiful balcony that’s perfect for watching the balloons at sunrise, and the included Turkish breakfast is truly exceptional. The cave rooms are cozy, beautifully decorated, and full of character.

    When the staff found out we were eloping in Cappadocia, they surprised us with a free upgrade to a cave suite! It was amazing.


    Do You Need a Rental Car to Get Around Cappadocia?

    My husband and I did not rent a car during our time in Cappadocia. We used private transfers to and from the airport and joined guided tours that included hotel pick-up, which made getting around super easy.

    That said, if you want to explore more remote areas or go off the beaten path, renting a car would be a good choice. Local transportation is limited in this part of the region, so having your own vehicle would give you more flexibility.

    Tips For Making The Most of Cappadocia

    Here are a few tips we learned from our own experience that can help you avoid any disappointments and make the most of your time in this magical place.

    Tip 1: Book Your Balloon Ride on The Day 1

    Hot air balloon rides are not guaranteed — they get canceled all the time due to weather. Even a light breeze can ground all flights.

    We booked ours for the second morning of our trip, and unfortunately, it got canceled due to wind. We never got to fly, which was disappointing, so I strongly recommend booking your ride for the first morning. Most tour companies will reschedule you for the next day if your ride gets canceled.

    Tip 2: Don’t Plan Anything on The Morning of Day 2

    Leave your Day 2 morning open just in case your balloon ride from Day 1 gets rescheduled. You don’t want to be rushing off to a tour or excursion when you could be up in the sky watching the sunrise. Keeping your schedule flexible gives you a better chance of making that once-in-a-lifetime balloon ride happen.

    Tip 3: March is The Windiest Month

    Try to avoid visiting in March, which is known as the windiest month in Cappadocia. Strong winds mean balloon rides are less likely to happen. If a balloon flight is your top priority, it’s best to plan to visit in late spring, like May, or early fall, like September.
